Adult-onset food allergies occur when the immune system begins reacting to foods that previously caused no issues. These reactions can develop suddenly and may range from mild symptoms to severe reactions like anaphylaxis, a life-threatening allergic response.
Some common symptoms include:
• Hoarseness or throat tightness
• Nausea and digestive distress
• Hives or skin irritation
• Difficulty breathing
• Swelling of the lips or throat
• Dizziness or rapid heart rate
In Alexas Kelly’s case, these symptoms appeared unexpectedly after a major health event that shifted her immune system.
In 2017, Alexas underwent a hysterectomy that immediately triggered surgical menopause. Shortly after surgery, complications led to an infection, hospitalization, and exposure to antibiotics that caused allergic reactions.
What followed was the beginning of a new health journey.
Months later, while drinking a smoothie containing ingredients she had eaten her entire life — including dairy, coconut, and peanut butter — she experienced her first anaphylactic reaction.
Her throat began tightening. Severe nausea followed. Her body reacted rapidly.
Her physician confirmed that she was experiencing anaphylaxis, and treatment began immediately.
But the story didn’t end there.
One of the most misunderstood aspects of severe allergies is the biphasic reaction, also known as a rebound reaction.
After the initial allergic response is treated, symptoms can return hours later and sometimes more severely.
This is why medical professionals emphasize continued monitoring and emergency preparedness after a reaction.
For Alexas, understanding this pattern became an essential part of building a long-term safety system.
Living with severe allergies requires preparation and structure.
Over time, Alexas developed a system that allowed her to continue traveling for work and living an active life.
Key elements of her protocol include:
• Carrying physician-prescribed emergency medications, including epinephrine auto-injectors and other medications recommended by her healthcare providers
• Maintaining a personal emergency medication kit that travels with her
• Informing trusted friends, colleagues, and family members about her allergies and emergency response plan
• Packing safe foods and snacks when traveling or attending long events • Using clear communication tools, such as her Food Allergy Alert Card, when dining out
• Working closely with medical professionals for ongoing testing, monitoring and care planning
Preparedness is not fear-based. It is leadership.
A diagnosis like this affects more than just your diet.
